Passion Fruit Cheescake

An easy and practical no bake recipe for Passion Fruit Cheesecake

A delicious Passion Fruit Cheesecake that combines the creaminess of cheese with the tropical, tangy flavour of the fruit. The crunchy biscuit base contrasts perfectly with the soft filling, while the glossy passion fruit topping adds a striking visual touch and enhances the exotic flavour. This dessert not only pleases the palate with its balance of sweetness and acidity, but is also irresistible to the eye. Perfect as a surprise for special occasions or as a different treat when you want to impress your guests with a tropical twist.

Ingredients:

For the base

  • ¼ vanilla or graham cracker
  • 120 g butter
  • For the filling
  • 1 cup cream cheese
  • 1 cup heavy cream
  • 1 cup condensed milk
  • 1 cup passion fruit juice concentrate
  • 20 gr unflavoured gelatine

For the bath

  • 1 cup passion fruit pulp
  • 1 cup water
  • ¼ cup sugar

Preparation:

Base

  1. Crush the biscuits using a food processor or rolling pin.
  2. Place the crushed biscuits in a bowl and add the softened butter.
  3. Mix until the ingredients are completely incorporated.
  4. Pour the mixture into a cake tin and press down firmly to form the base.
  5. Refrigerate for one hour.

Filling

  1. Bring the passion fruit juice and sugar to the boil in a saucepan for about 5 minutes. Leave to cool completely.
  2. Place the cream cheese and cream in a mixing bowl. Whisk until smooth.
  3. Separately, mix the condensed milk with the cooled passion fruit juice reduction.
  4. Blend this mixture into the cheese mixture on low speed.
  5. Soak the gelatine in 1/4 cup cold water in a small bowl. Mix well and microwave for 40 seconds.
  6. Add the dissolved gelatine to the shake and mix until all the ingredients are perfectly incorporated.
  7. Pour the mixture over the sponge base.
  8. Refrigerate for at least two hours or until completely set.

Passion fruit topping

  1. Mix the ingredients for the bath (passion fruit juice, sugar and pulp) in a saucepan.
  2. Boil the mixture until it has a slightly syrupy consistency and turns golden brown.
  3. Leave to cool to room temperature.
  4. Carefully pour over the set cheesecake, sprinkling the passion fruit seeds evenly over the surface.
  5. Refrigerate for a further 30 minutes before serving.
